First industry good hygiene practice guide

he first of a series of good practice guides to help companies meet the food hygiene regulations is published today. Produced by the Mail Order Fine Foods Association (MOFFA), it sets out recommended methods by which food business operators may comply with the hygiene regulations and is recognised by the FSA.The Food Industry Guide to Good Hygiene Practice – Mail Order Food is available from The Stationery Office.
The guide covers the sale of perishable foods by mail order. The main aim is to provide easy to understand and practical advice on the best ways of complying with the requirements in Regulation (EC) No. 852/2004 and the temperature requirements of the Food Hygiene (England/Scotland/Wales/Northern Ireland) Regulations 2006.
The guide will assist with applying a food safety management system based on the principles of HACCP.
The use of this guide by businesses is voluntary. However, the Agency hopes it will prove useful to industry in meeting legal food hygiene obligations, as well as ensuring that high standards are achieved in food safety.
